Rebel Cheese

I’ve always loved cheese. I remember as a kid sneaking into the fridge and shaving off a corner from my dad’s aged white cheddar block. I have mouth-watering memories of Welsh rarebit. So, when I opted for a vegan lifestyle, I felt a bit like a popped balloon. Fortunately, there are amazing at-home options, from Kite Hill ricotta for lasagna, Violife Colby Jack shreds sandwiches, and Credo queso because in Texas tacos are a rite of passage.

But away from home, no one is doing vegan cheese better than Rebel. I live dangerously close to the Mueller Development and I’m putting in an online order at Rebel at least once per week. They have a fantastic brunch, yummy sandwiches, a great wine selection, and take away deli options. I feel like I’ve tried everything on the menu, and it is all fantastic. Beyond their great in-house menu items like the grinder, ruben, grilled cheese, and croissant breakfast sandwich, they are a great small business partner to other vegan shops in town; Rebel’s rotation includes Bistro Vonish, Capital City Bakery, and others, so you can get a cinnamon roll or kolache with your cheese. Let’s just layer the guilty pleasures into one happy stack!

The salads are also top-notch, with sweet and savory toppings. Don’t slouch on the sides either; I love the carrot salad. The atmosphere offers a great indoor-outdoor bistro feel, and they’ve transitioned well during the pandemic, offering takeaway and delivery options. For social butterflies, they have interactive virtual cheese tastings and they even offer cheese plates with special themes! The brunch is FANTASTIC, and I usually eat it so fast that I don’t stop to take photos. Pigless in Paris gets two thumbs up.

For mother’s day and easter they offered special bundles, and I was the first to raise my hand for a vegan quiche and flowers. They have a great selection of gift ideas too, from chocolate and picnic materials, to fancy pickles and jams. I also adore bringing non-vegan friends to the shop to see if they even notice that it is vegan; some don’t know the difference and love it!

This place is just so good. Period.
